
Man has it been a busy week…..anyone with me? I’m a stay at home mom normally but with no mommy and me, no school, no sitter and no playground it’s been an adventure!! So what’s an ex special ed/early ed teacher to do? Why not start a virtual mommy and me group? Yup that’s what I did and I will be adding pictures and descriptions of all the fun art and activities we do here in this blog! So to start us off this week my kiddos and I made some oatmeal cookies to end the week. Baking with babies can be stressful but there are ways to ease the stress. First off simple recipes and second prep your ingredients out in front of you to make it easier. They love love love to pour, mix and watch everything combine in front of their little eyes!!! Well and who doesn’t enjoy a cookie fresh out of the oven? So below I will add the recipe we used and some cute pictures of the kiddos getting involved!

Oatmeal Cookies
Ingredients:
- 1 cup butter
- 1 1/4 cups brown sugar
- 3/4 cup sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 1/4 cups flour
- 1 tsp salt
- 2 tsps baking soda
- 1/2 tsp baking powder
- 2 cups old fashioned oats
- Preheat oven to 350 degrees and get baking sheets ready (line with parchment paper or use non stick)
- Cream butter and sugars. Add eggs and vanilla until combined.
- Add flour, salt, baking soda, baking powder, and oats. Mix until combined.
- Scoop cookies onto baking sheets (I used a mini scoop for the kiddos but you can use bigger if you want). Bake 7-10 minutes or until edges are just lightly golden brown.
- Let cookies rest on cookie sheet 2 minutes then transfer to cooling rack.
- Eat the yummy cookies!!!
Most importantly don’t be afraid to get messy with them kiddos and let them explore!!! There is always bath time!
